Caramel Pecan Cheese Pie

Ingredients:

Directions:

  1. Pastry:
  2. Place flour, sugar, butter, sugar and salt into a large mixing bowl.
  3. Mix with a pastry blender until it resembles oatmeal .
  4. Add the lemon juice, cutting it in with a fork.
  5. Add enough water so that it stays together when crushed in your hand.
  6. Roll out and fit it into a 9-inch deep dish pie pan with fluted edges.
  7. Cheese layer:
  8. Place cream cheese, sugar, salt, vanilla, and egg into a mixing bowl.
  9. Beat until smooth.
  10. Pour into unbaked pie shell and top with pecans.
  11. Caramel layer:
  12. Mix together brown sugar, corn syrup and eggs.
  13. Do NOT, however, mix throughly!!
  14. Pour over top of the cheese/pecan layer.
  15. Bake at 375 degrees for 30-35 minutes, or until the cheese layer no longer shakes and a toothpick or knife comes out clean and dry.
  16. Cool.
  17. TRY TO KEEP PEOPLE AWAY LONG ENOUGH TO SAVE YOURSELF A PIECE!!!
