Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix the dry ingredients in a large bowl.
  3. Put egg white, applesauce, prune puree, and vanilla.
  4. In a plastic cup and whip until fluffy with immersion blender.
  5. Fold the egg white mixture into dry ingredients.
  6. Mix well.
  7. Spray hands with cooking spray before making each cookie.
  8. Place on cookie sheet, leave room between each cookie.
  9. Bake 7-8 minutes for soft cookies, about 10 minutes for chewy cookies.
  10. Let cool on cookie racks (removed from pan) and store in Tupperware, place waxed paper between each cookie.
