Candied Grapefruit Peel

Ingredients:

Directions:

  1. Make cuts in skin and pith from end to end dividing skin into four equal sections.
  2. Remove peel and white pith in one piece from each section with fingers.
  3. Reserve fruit for other use.
  4. Discard white portion of pith.
  5. Cut peel into 1/4 strips then place in a large heavy enamel saucepan with water to cover.
  6. Boil covered for 30 minutes then drain well.
  7. Mix gelatin with 2 cups water and spices then and add to fruit in saucepan.
  8. Cover then bring to boil.
  9. Reduce heat and simmer for 50 minutes until syrup is almost absorbed stirring frequently/
  10. Lift out peel with tongs and roll in pan sprinkled with sugar until heavily coated.
  11. Cool on waxed paper and store in airtight containers.
