Ingredients:

  • 6 eggs
  • some basil (garnish)
  • some of your favorite spices
  • 1 x muffin baking tray not the huge muffins, the smaller 1.
  • some filter coffee.... added yum yum

Directions:

  1. ~Tomato Sauce~
  2. Chop up the onion, and shallow fry in a pan with spices, until golden add the copped tomato's and stir.. this will make a sauce, add say 1/4 cup of water and leave to sauceify... *giggles* on a med heat and stir occasionally
  3. ~Breakfast basket~
  4. Butter the bread on one side,
  5. Then put the bread butter side down in the muffin pan
  6. Put in the oven till brown.. (Think of them as shells)
  7. Crack an egg in each and pop back into the oven till the egg is the way you like it, soft say 5 min, hard say 20 min, (be careful they don’t burn)
  8. Once done and you happy, this is the time you put them on the plates
  9. Pour some of the tomato sauce (that you made here) over the bread basket and half on the plate,
  10. Garish with some basil leaves really makes the dish... mmm!
  11. Give this to your loved one with some filter coffee.... Great start to any day!
