Ingredients:

  • 3 medium. potatoes
  • 1 1/2 tbsp. olive oil
  • 1 onion slice
  • 2 tbsp. flour
  • 1 salt and pepper to taste

Directions:

  1. Wash Swiss chard and chop it up. Peel potatoes and cut into quarters. In medium saucepan, add potatoes and chopped Swiss chard, and add enough cold water to cover potatoes. Cover with lid and cook over medium heat. Add 1 teaspoon salt, and cook until potatoes are boiled, about 20 minutes. Drain water from saucepan and set aside.
  2. With potato masher, mash the potatoes and Swiss chard. Set aside. In medium skillet, add olive oil with slice of onion. Saute onion until lightly browned. Remove onion, and to oil add 2 tablespoons flour, stirring until it is a thick paste.
  3. Add 1 cup of the potato water from the Swiss chard to the skillet and stir. Chop the sauteed onion and also add to skillet. Then pour the skillet mixture into the saucepan with the Swiss chard and potato, add salt and pepper to taste. Cover with lid and cook over low heat for 5 minutes.
