Ingredients:

Directions:

  1. Heat the blackberries (keeping a few aside) gently with the sugar for a couple of minutes or until they give off juice.
  2. Whizz in a food processor.
  3. Then push through a fine sieve.
  4. Beat the mascarpone with a spoon until it is floppy.
  5. Then fold in the blackberry puree and the vanilla etract.
  6. Loosely whip the cream and fold it in.
  7. Spoon into 4 dishes and decorate with blackberries.
