Beer Glazed Potatoes

Ingredients:

  • 2 tbsp olive oil
  • 4 medium potatoes cut in 1/2 wedges
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 medium green sweet pepper cut in 1/2 wedges
  • 1/2 cup chopped onion
  • 1/4 cup pale ale, lager or amber beer
  • 1/4 cup beef broth
  • 1 tbsp brown sugar

Directions:

  1. In a skillet heat olive oil over medium heat then layer potatoes into skillet.
  2. Sprinkle with salt and pepper then cook uncovered over medium heat for 15 minutes.
  3. Turn occasionally then stir in green sweet pepper and onion then cook and stir 5 minutes more.
  4. Add beer, broth and brown sugar then cook uncovered 5 minutes more.
