Banana Chocolate Chimp Bread

Ingredients:

  • 1/3 cup margarine
  • 1/2 cup sugar
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 cup soy or rice milk
  • 1 tsp vanilla
  • 1/2 cup of chocolate chips

Directions:

  1. Preheat oven to 350.
  2. Cream margarine and sugar, mix in flour, baking soda and baking powder.
  3. Add bananas, soymilk and vanilla.
  4. Mix until batter is moist and sticky.
  5. Fold in chocolate chips.
  6. Pour batter into greased loaf pan and bake for about 50 minutes or until top is brown (or passes toothpick test).
  7. It is very easily adapted to any filling you might want to substitute for the chocolate chips, and is good on its own too.
  8. Note:
  9. Make one with the chocolate chips, one with pineapple chunks, or coconut and sunflower seeds (a tropical banana bread!) or a plain one with a bit of cinnamon, nutmeg for added spice.
