  1. Remove chicken and skin from bones and chop into bite size pieces.
  2. Place chicken, celery, onions, and green onions in large bowl. Stir in enough mayonnaise to coat well or to taste. Add creole spice and cracked black pepper, Serve over bed of assorted lettuce. Serve with assorted crackers, breads or rolls. Serve or refrigerate until ready to serve.
