Australian Sweet Apple Chutney

Ingredients:

  • 8 oz onions
  • 1 lb tomato
  • 2 1/2 lbs brown sugar
  • 4 oz currants
  • 1 tsp ground cloves
  • 1 oz preserved gingerroot, chopped
  • 1/2 tsp dry mustard
  • 1 tbsp salt
  • 1 1/2 pints vinegar

Directions:

  1. Peel and core apples and stew them gently in a very small quantity of water until tender.
  2. Chop raisins and onions.
  3. Skin the tomatoes.
  4. Place all ingredients in a saucepan and simmer gently for 11/2 hours.
  5. Place in sterilised jars and cover.
