Ingredients:

Directions:

  1. Saute mushrooms and onions in butter then stir in spinach and cook just until limp.
  2. Set aside.
  3. Blend eggs with ricotta cheese, milk, flour, mustard, salt, pepper and nutmeg then mix well.
  4. Stir in vegetable mixture.
  5. Pour into deep quiche pan and bake at 350 for 20 minutes.
  6. Top with tomato slices, almonds and cheese. Return to oven and bake 10 minutes longer.
  7. Serve warm or cold.
