Ingredients:

  • 2 medium egg whites
  • 1/4 tsp almond essence

Directions:

  1. Preheat oven. Whisk the egg whites until stiff. Gradually fold in the sugar, then stir in the ground almonds and almond essence to form a firm paste.
  2. Put teaspoonfuls of the mixture on to baking trays lined with baking parchment, spacing them slightly apart, and press a whole almond into each.
  3. Bake for 12-15 minutes until just golden and firm to touch.
  4. Leave to cool a little, then transfer from the baking trays to wire racks to cool completely. Store in airtight containers until ready to eat.
