Vegetarian Chop Suey

Ingredients:

  • 1 medium onion
  • 2 cloves garlic
  • 1 tblsp corn starch
  • 1 tblsp olive oil
  • 361 g lite tofu

Directions:

  1. Saute veggies in olive oil till soft (except water chestnuts)
  2. Stir corn start and soy sauce till smooth
  3. Add enough water to make one cup, add to veggies, stirring constantly
  4. Add water chestnuts and tofu (diced), heat through
