Tuna Pasta Fritters With Salsa

Ingredients:

Directions:

  1. Cook pasta in a saucepan of boiling water for 10 minutes, or according to instructions on packet. Drain and rinse pasta under cold water.
  2. Combine pasta with the tuna, zucchini, flour, eggs, milk chives and mint leaves.
  3. Mix well and season to taste.
  4. Heat oil in a pre-heated frying pan and drop in tablespoons of mixture. Cook both sides for 3-4 minutes or until golden.
  5. Remove to a paper towel lined plate and keep warm.
  6. Combine tomato salsa ingredients and serve over patties.
