Ingredients:

Directions:

  1. Pre-heat oven 500 degrees.
  2. Make a batch of pina coladas, pour yourself some and turn on jimmy buffet.
  3. Combine the yogurt/sourcream and pina colada and chill for serving.
  4. Put coconut flakes and panko in a large storage bag.
  5. Dredge shrimp in cornstarch ( shake off excess before next step).
  6. Dip shrimp in egg whites.
  7. Toss in the coconut/panko bag ( give a little shake with each one so it gets coated before you throw the next one in)
  8. I usually do 1/2 batch first and remove them from coconut/panko bag and then do the rest).
  9. Spray baking sheet liberally with non- stick spray.
  10. Place shrimp on sheet and spray again,liberally.
  11. Bake each side for 7-10 minutes.
  12. Serve with pina colada sauce - and another drink!
