Ingredients:

  • 1 whole blah

Directions:

  1. /4 cups chicken broth
  2. /2 cups pea pods halved
  3. /4 cup soy sauce
  4. Tsp. peanut oil
  5. /2 tsp. red pepper flakes
  6. Small red bell pepper cut into thin strips
  7. Tbsp. peanut butter
  8. Chicken breast halves boneless and skinless
  9. Clove garlic minced
  10. Cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
  11. Tbsp. fresh ginger grated
  12. Tbsp. peanuts (optional)
  13. INSTRUCTIONS
  14. Combine chicken and soy sauce in shallow bowl; set aside.
  15. Heat oil in 10-inch skillet over medium heat. Add rice and garlic; cook and stir 1 minute. Stir in broth, peanut butter and pepper flakes. Bring to a boil, stirring until peanut butter is melted.
  16. Arrange chicken over rice mixture, adding soy sauce to skillet; reduce heat. Cover and simmer 20 minutes.
  17. Fold-in pea pods and ginger; sprinkle top with pepper strips. Remove from heat.
  18. Set aside, covered until all liquid is absorbed, about 5 minutes. Sprinkle with peanuts, if desired.
