Ingredients:

  • 2 large tomatoes
  • 1/8 cup basil

Directions:

  1. Remove tops of tomatoes, scoop out and reserve the pulp
  2. Mix pulp with rice, olives, and torn basil
  3. Spoon the stuffing into the tomatoes and top with cheese
  4. Eat raw, bake, or broil as desired.
