  3. Whole strawberries make a stunning topping for this creamy
  4. Cheesecake-like pie. Using a food processor to mix the filling will
  5. Ensure it’s smooth.
  6. CRUST
  7. /2 cups graham cracker crumbs
  8. Tablespoons sugar
  9. Teaspoon grated orange peel
  10. Tablespoons unsalted butter, melted
  11. FILLING
  12. Eggs
  13. /3 cup sugar
  14. Oz. cream cheese, softened
  15. /2 cup sour cream
  16. Tablespoons all-purpose flour
  17. Teaspoon vanilla extract
  18. /2 teaspoon grated orange peel
  19. TOPPING
  20. Cups whole fresh strawberries
  21. /4 cup red currant jelly, melted
  22. Heat oven to 325°F. Spray 9-inch pie pan with cooking spray.
  23. Combine crumbs, 2 tablespoons sugar and 1 teaspoon orange peel in
  24. Medium bowl. Stir in melted butter until crumbs are moistened. Press
  25. Into bottom and up sides of pan. Bake 6 minutes or until set.
  26. Process eggs and 2/3 cup sugar in food processor 1 minute or until
  27. Smooth. Add cream cheese; pulse to break up. Process 15 seconds or
  28. Until smooth. Add all remaining filling ingredients; process just
  29. Until smooth. Pour into crust.
  30. Bake 30 to 35 minutes or until top is firm when gently shaken and
  31. Outside edge is slightly puffed. Place on wire rack; cover with paper
  32. Towels. Cool 2 hours. Remove paper towels; cool to room temperature.
  33. Cover and refrigerate until thoroughly chilled, at least 5 hours or
  34. Overnight.
  35. Arrange strawberries over top of pie; brush with jelly. Serve cold.
  36. Store in refrigerator.
