Spinach and Artichoke Dip with Banana Peppers

  1. Cans artichoke hearts (13.75 oz. each), drained and quartered
  2. Pkg. frozen chopped spinach, thawed and squeezed dry
  3. C. mayo
  4. Pkg. cream cheese
  5. /4 c. diced onion
  6. /4 c. diced red peppers
  7. T. minced garlic
  8. C. monterey jack cheese, shredded
  9. /2 c. drained and chopped banan pepper rings
  10. Stir together artichoke, spinach, mayo, cream cheese, onion, bell peppers and garlic in slow cooker. Cover and cook on high for 1-2 hours or on low heat for 3-4 hours. Stir in cheese and pepper rings. Cover cooker; let dip stand until cheesemelts (about 5 min). Set cooker on warm setting and serve with crostini or pitas.
