Snow Peas with Shrimp

Ingredients:

Directions:

  1. Cover snow peas with boiling water and let stand for 1 minute.
  2. Drain well and plunge into ice water.
  3. Drain again.
  4. Remove stem and strings from peapods, carefully open with a toothpick.
  5. Combine shrimp with the mayo, green onion and lemon juice.
  6. Fill pods with the shrimp mixture.
  7. Chill and serve.
