Directions:

  1. Slow Cooker Mexican Beef Soup
  2. Lb. beef stew meat, in 1/2 inch cubes
  3. Cups water
  4. Ounces beef broth
  5. Ounces tomato sauce
  6. /4 teaspoon salt
  7. /4 teaspoon black pepper
  8. /2 teaspoon garlic powder
  9. Teaspoons cumin
  10. Small can corn kernels
  11. Lb. can kidney beans, rinsed and drained
  12. Teaspoon dried oregano
  13. /2 cup sour cream
  14. Add the beef, water, broth, tomato sauce, salt, black pepper, garlic powder, and cumin to the slow cooker. Cover and cook on Low for 8 hours, or until the meat is tender.
  15. Turn the heat up to High and stir in the corn, kidney beans, and oregano.
  16. Cover and cook for 15 minutes, then serve with the sour cream.
  17. Serves 4
