Simply Quiche Lorraine

Ingredients:

  • 1 nine inch prepared pie crust.
  • 1/3 cup finely chopped onion .
  • 4 eggs
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp cayenne pepper (optional)

Directions:

  1. OK, so I cheat a little here and there. I use a store bought piecrust. I was never good at those.
  2. Fry the bacon up crisp, remove from skillet, drain on paper towel. See Photo
  3. Beat the eggs slightly in a small bowl.
  4. Whisk in the remaining ingredients except the chopped onion.
  5. Line the bottom of the piecrust with the crumbled bacon. See Photo
  6. Layer the chopped onion on top of the bacon.
  7. Then add a layer of shredded cheese. See Photo
  8. Pour the egg mixture over the top of the other ingredients.
  9. Preheat the oven to 425 degrees F. Cover the edge of the piecrust with foil.
  10. Place the pie in the oven and cook uncovered for 15 minutes.
  11. Reduce the oven temperature to 300 degrees F. Continue to bake for about 30 minutes or until a knife inserted half way between the edge and the center comes out clean.
  12. Let stand for 10 minutes, cut and serve hot.
