  1. Heat oil in skillet, add scallions.
  2. Add sherry, soup mix and water, bring to a boil, lower heat and simmer until it starts to thicken add shrimp, tomato, spinach and cashews.
  3. Simmer until shrimp turn pink.
  4. Serve over rice.
