turkey carcass (with some meat left on if possible), onions, quartered, celery rib, coarsley chopped, carrots, peeled, cold water (or use enough water to cover), garlic (separated into whole cloves, can omit if desired), peppercorns, bay leaf, salt (optional and to taste)

butter (can use hard margarine), all-purpose flour, all-purpose flour, black pepper (more is better , i use freshly ground pepper), pan drippings (or see options below the recipe)

whole chicken (about 3-1/2-lb or a small turkey), oil, melted butter, white salt (i use seasoned salt), garlic powder, paprika, fresh coarse ground black pepper (to taste)
