Ingredients:

  • 150 g butter
  • 3 large eggs
  • 1 tbsp thick milk
  • 175 g flour
  • 2 tbsp cream
  • 1 tbsp icing sugar

Directions:

  1. Pre heat oven at 170 deg C .
  2. Beat the butter and sugar until creamy .
  3. Add the eggs and essence .
  4. Beat until thick .
  5. Add the flour and the milk .
  6. Mix well .
  7. Pour into a 9 inch greased pan .
  8. Bake for 35 mins .
  9. Cool .
  10. Cut into 2 layers .
  11. Spread the jam and then the cream on a layer
  12. And sandwich with the other layer .
  13. Dust with icing sugar .
