Salmon With Roasted Cherry Tomatoes

Ingredients:

  • 2 cups cherry tomatoes
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cloves garlic, minced
  • cooking spray
  • 2 (6 oz) salmon fillets

Directions:

  1. Preheat oven to 400.
  2. Combine the first 6 ingredients in a jelly roll pan coated with cooking spray; toss to coat tomatoes.
  3. Bake at 400 for 15 minutes.
  4. Add fish to pan.
  5. Bake an additional 10 minutes or until fish flakes easily when tested with fork.
  6. Serve with lemon juice.
