Ingredients:

  • 3 tbsp icing sugar
  • 3/4 cup plus 2 tbsp (7 oz.) flour
  • 1 tbsp cornflour
  • 1/4 - 1/2 cup desicated coconut

Directions:

  1. Heat oven to 160°C.
  2. Combine and sift flour and corn flour together in a bowl.
  3. In a mixing bowl,beat butter and icing sugar until creamy.
  4. Add vanilla and beat for few seconds.
  5. Add flour mixture to the butter mixture and mix until it forms a soft dough.
  6. Cover and chill for 30 minutes.
  7. Divide the mixture into 14 equal parts and shape into balls.
  8. Now roll these balls in coconut to coat.
  9. Place cookies on ungreased cookie sheets and press to slightly flatten.
  10. Bake for 20-22 minutes or until crisp and golden brown.
  11. Remove to a wire rack to cool.
