Pumpkin Streusel Pie

Ingredients:

  • 1 2/3 cups pumpkin puree
  • 3/4 cup applesauce
  • 1 tsp cinnamon
  • 3/4 tsp ground ginger
  • 1/2 tsp allspice
  • 1/2 cup flour
  • 1/4 cup wheat germ
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 tsp ground ginger
  • 2 tsp canola oil

Directions:

  1. Chill prepared crust for 30 minutes.
  2. Preheat oven to 350F degrees.
  3. Puree all filling ingredients in a food processor or blender.
  4. Pour into prepared crust.
  5. For topping stir first 7 ingredients together in a bowl.
  6. Stir in oil until dry ingredients are lightly coated.
  7. Sprinkle evenly over pumpkin filling.
  8. Bake until crust is golden and filling is set, about 45 minutes.
  9. Let cool.
  10. Serve at room temp or chilled.
