Pumpkin-Pecan Baked Oatmeal

Ingredients:

  • 2 eggs
  • 1 can (15 oz) solid- pack pumpkin
  • 1 cup 2% milk
  • 3/4 cup packed brown sugar
  • 1-1/2 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 tsp ground cloves
  • additional 2% milk and brown sugar

Directions:

  1. In a large bowl, combine the first 12 ingredients. Transfer to a greased 11-in. x 7-in. baking dish. Cover and refrigerate for 8 hours or overnight.
  2. Remove from the refrigerator 30 minutes before baking. Uncover and stir; sprinkle with pecans.
  3. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°. Serve warm with additional milk and brown sugar. Yield: 5 servings.
