Ingredients:

  • 1/4 cup parsley or chives
  • 2 tablspoons melted butter

Directions:

  1. 1. Place baking sheet in oven and preheat to 450 degrees F
  2. 2. While oven is preheating peel and shred the potatoes approx 2 1/2 cups and combine with the cheese and the butter
  3. 3. Remove the sheet from the oven and spoon the mixture on to it and gently shape into circles
  4. 4. Bake for about 12 minutes and then flip and bake until golden brown and crisp about 8-10 minutes
