Ingredients:

  1. Using a 5 quart pot bring water to a full boil.
  2. Meanwhile, sort out rocks and old beans from bag. Throughly wash beans in cold water until water comes out clear.
  3. When water has come to a full boil add beans, onion, garlic and oil. Cover and allow to cook for 30 minutes.
  4. Check water level (you always want to have enough water just to cover the beans) if it looks like it needs it then add more. Reduce heat to a low simmer and continue to cook for an 1 1/2 to 2 hours. Remember to check water level every 30 minutes.
  5. Once beans are fully cooked add salt and allow to simmer 5 minutes.
  6. These beans can easily be mashed to make refried beans.
