Directions:

  1. Pineapple cookies
  2. Cup butter
  3. Cup brown sugar
  4. Cup white sugar
  5. Eggs
  6. Oz can crushed pineapple, drained and juice reserved
  7. Tsp. Vanilla
  8. Cups flour
  9. /2 tsp. Salt
  10. /2 tsp. Baking soda
  11. /2 tsp. Baking powder
  12. For the icing:
  13. Reserved pineapple juice
  14. Cups powdered sugar
  15. In a mixer bowl cream the butter with the sugars. Add the eggs, pineapple
  16. Vanilla. In a large bowl, combine the dry ingredients. Blend into the wet
  17. Ingredients. Drop by teaspoonful onto a greased cookie sheet. Bake at 400
  18. Degrees for 8-10 minutes.
  19. For the icing: Gradually add pineapple juice to the powdered sugar by the
  20. Tablespoon. You want the consistency to be a bit thick, but still stream
  21. The spoon. While the cookies are still warm, spread the icing on the tops.
  22. This recipe makes about 8 dozen soft, delicious cookies.
