Ingredients:

Directions:

  1. Remove mushroom stems and chop.
  2. In skillet, melt butter, saute mushroom stems, onion, bell pepper, and garlic until onions are clear.
  3. Add cracker crumbs, pepperoni, parmesan and seasonings.
  4. Add enough chicken broth until mixture is stuffing consistency.
  5. Fill caps with stuffing.
  6. Place in shallow baking dish with 1/4 water in bottom of pan.
  7. Bake uncovered 325 for 25 minutes.
