Peppermint Frosting

Ingredients:

  • 2 1/4 cups sugar
  • 1/2 cup water
  • 3 large egg whites
  • 1/2 tsp pure peppermint extract
  • chocolate curls to garnish cake , if desired

Directions:

  1. Combine sugar, water, egg whites and corn syrup in bowl of stand mixer.
  2. Whisk by hand to blend well.
  3. Set bowl over saucepan of gently simmering water.
  4. Whisk constantly by hand until mixture resembles marshmallow cream and ribbons form when whisk is lifted, about 8 to 9 minutes.
  5. Whisk in peppermint extract.
  6. Remove bowl from over water and place on stand mixer using whisk attachment.
  7. Beat on high speed until mixture is barely warm to touch and very thick, 7 to 8 minutes.
  8. Using offset spatula and working quickly, spread frosting over sides and top of cake.
  9. Sprinkle chocolate curls on top and sides, if desired.
