Ingredients:

Directions:

  1. Pre-heat oven to 350 degrees
  2. Lightly grease & line the base of a deep 8 inch cake pan
  3. With an electric mixer, beat 3/4 cup of the butter & sugar until creamy
  4. Beat in eggs
  5. Beat in flour & ginger
  6. Beat on medium until batter is smooth
  7. Spoon into prepared cake pan, leveling the surface
  8. Arrange pear slices in a spiral over the top of the batter
  9. Sprinkle with brown sugar & dot with remaining 1/4 cup butter
  10. Bake 35 - 40 mins until cake is golden & springy to the touch & a tooth pick inserted into the center comes out clean
  11. Cool on wire rack for 10 mins & then turn out onto wire rack to cool completely
  12. Serve with icecream or whipped cream
