One Bowl Blueberry-Pecan Cake

Ingredients:

  • 5 tbsp butter
  • 2 eggs
  • 2/3 cup buttermilk
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cup flour
  • 1/3 cup finely chopped pecans
  • sifted confectioner's sugar

Directions:

  1. Pre-heat oven to 350 degrees.
  2. Spray a 9 inch springform pan with cooking spray and flour.
  3. Place the butter in a microwave safe bowl and melt. Add sugar, stirring with a whisk. Add eggs. Stir well. Stir in buttermilk and next 6 ingredients (orange rind through almond extract). Add flour and stir JUST UNTIL BLENDED. Gently fold in the blueberries and pecans.
  4. Spoon mixture into the springform pan, spreading evenly. Bake for 45 - 55 minutes using a cake tester to determine doneness. Cool 10 minutes in pan and then turn out onto a dish. After it's completely cool, sprinkle with confectioner's sugar.
