Ingredients:

  • 1/3 cup olive oil. (there is so much confusion and static and ego lately going on with olive oil- and that just muddles things up. just find an olive oil you like and go with it. yes, there are many exceptions however this is just salad dressing.)
  • 1 tsp salt
  • 1 tsp dried oregano. if you have fresh use 2.
  • 1/2 tsp dried basil. if you have fresh, use 1.
  • 2 tbsp water

Directions:

  1. Wisk all together well in a large bowl.
  2. Pour into a container and let marinate overnight for best flavour.
  3. You can serve it immediately, it is great then too.
  4. Keep in a salad dressing bottle in your cupboard away from sunlight.
  5. Makes a good rub for leg of lamb prior to roasting!
