Ingredients:

  • 1 cup canola oil
  • 1 cup brown sugar firmly packed
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 3 cup oats
  • 1 cup raisins heaping
  • chopped walnuts if desired, to taste

Directions:

  1. Heat oven to 350. In large bowl, beat oil and sugars on medium speed until well blended. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in raisins, oats and nuts (if desired). Mix well. Drop by heaping tablespoonfuls onto ungreased cookie sheets and bake 8 to 10 minutes or until light golden brown. Cool one minute on cookie sheets then move to wire rack to cool completely. Store in airtight container. To keep very fresh, store in freezer and take out just enough to eat at one sitting.
