Microwave Cocoa Pudding

Ingredients:

  • 3 cups skim milk
  • 1/2 cup sugar
  • 4 1/2 tbsp cornstarch
  • 1/8 tsp salt
  • 1 tsp vanilla

Directions:

  1. Whisk dry ingredients in large glass bowl.
  2. Slowly stir in milk til smooth
  3. Microwave 4 minutes on high, stir.
  4. Microwave 4-7 minutes on high, stirring after each minute. DONT use whisk!
  5. When thickened, stir in vanilla extract. Spoon into serving bowls, cool, refrigate, serve.
