Maple Syrup Pie Or Backwoods Pie

Ingredients:

  • 1-1/2 tbsp. all-purpose flour
  • 1 cup milk
  • 1 tbsp. butter
  • pastry for single- crust 9-inch pie
  • (or edna''s speedy pat-in pastry, see below)

Directions:

  1. In bowl, combine brown sugar and flour.
  2. Pour in milk and maple syrup.
  3. Add butter and egg yolks.
  4. Stir until blended.
  5. In separate bowl, beat egg whites until stiff peaks form.
  6. Fold into brown sugar mixture.
  7. Pour over pie shell.
  8. Bake in 400°F oven for 10 minutes.
  9. Reduce temperature to 325°F and bake for about 40 minutes or until browned on top and set but still slightly jiggly inside.

  13. 1-1/2 cups all-purpose flour
  14. 1-1/2 tsp. granulated sugar
  15. 3/4 tsp. salt
  16. 1/2 cup vegetable oil
  17. 3 Tbsp. milk
  18. In pie plate, combine flour, sugar and salt.
  19. In glass measure, stir milk into oil.
  20. Pour over dry ingredients and toss with fork until most of flour is incorporated.
  21. Mash with fork, blending well and patting evenly over bottom and up side of pie plate.
  22. Flute edge.
