Ingredients:

Directions:

  1. Rinse lentils and boil in 4fl oz water, gently simmer for 30 mins or until soft
  2. While lentils are cooking, skin tomato and chop very small.
  3. Chop onion, coriander and chili very small and add to tomato.
  4. When the lentils are cooked, drain them and toss with the juice of 1 lime.
  5. Stir in the tomato mixture, cover and rest for at least 1 hour.
