Lemon Lover's Lemon Mascarpone Tart

Ingredients:

Directions:

  1. Preheat oven to 450 degrees.
  2. Fit crust into a 9 inch tart pan w/removable bottom if available.
  3. Bake pie crust for about 12 minutes or until golden, cool.
  4. Beat eggs and add a the mixture of sugar and cornstarch gradually.
  5. Add lemon juice and zest into the mixture.
  6. Cook in the top of double boiler (bowl over pot of hot water) until thick while stirring constantly.
  7. Add the butter and let it cool slightly.
  8. Pour filling into pie shell and let it cool completely.
  9. Combine mascarpone cheese, sour cream and sugar until well blended.
  10. Spread evenly over lemon filling.
  11. Sprinkle on pistachios if using.
  12. Refrigerate until ready to serve.
