Ingredients:

  • 1 cup sugar
  • 4 tbsp cornstarch
  • 1/2 tsp salt
  • 1 cup water
  • 2 tbsp lemon rind
  • 1/2 cup lemon juice
  • 2 tbsp butter

Directions:

  1. Mix ingredients in a saucepan.
  2. Bring to a rolling boil and boil for 1 minute, stirring constantly.
  3. Remove from heat and cool stirring occasionally.
  4. Chill before using.
