Ingredients:

  • 1/2 cup icing sugar
  • 1 cup butter
  • 1 3/4 cups flour
  • 1/2 cup rice flour
  • 2 tbsp icing sugar

Directions:

  1. Cream icing sugar and butter until fluffy.
  2. Combine flours and add to the butter mixture, in small portions.
  3. Stir in mixed candied fruit.
  4. Turn batter out into a 9 x 13 pan. Press to the sides and smooth with the back of a spoon.
  5. Score into bars with a sharp knife and prick the surface with a fork.
  6. Bake 10 minutes at 350*, then lower the oven to 300*. Bake for 35 - 45 minutes.
  7. Remove from oven and immediately cut along the scored lines.
  8. Cool, then store in an airtight container.
  9. Dust with icing sugar before serving.
