Ingredients:

Directions:

  1. In a large deep pot add the lamb with some sunflower oil.
  2. Peel and chop roughly the veg.
  3. On top of the lamb add the potatoes in a layer
  4. Next add the carrots on top
  5. Then layer on top the parsnips
  6. Tuck in the bayleaf & peppercorns
  7. Make up a litre of stock
  8. Pour on top
  9. Do not stir
  10. Bring to boil simmer for 1.5 - 2hrs
