Going Bananas Banana Bread

Ingredients:

  • 1 (8 oz) package cream cheese, softened, plus extra for serving if desired
  • 1/4 cup butter
  • 1 cup sugar
  • 2 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 cup mashed overripe banana
  • 1 cup chopped nuts (optional)

Directions:

  1. Preheat oven to 350.
  2. Grease a 5x9 inch loaf pan.
  3. Combine cream cheese, butter and sugar until well blended.
  4. Sift together flour, baking powder and baking soda.
  5. Add dry ingredients to cream cheese mixture.
  6. Mix in eggs and bananas until just moistened.
  7. Fold in nuts (if you are using them).
  8. Pour into prepared pan.
  9. Bake 70 minutes or until a toothpick inserted in the center comes out clean.
  10. Serve with softened cream cheese.
