Ingredients:

Directions:

  1. Combine all the ingredients in a small, non-reactive saucepan. Bring to a boil over high heat.
  2. Immediately reduce the heat to low and simmer, uncovered, for about 3 minutes.
  3. Remove the pan from the heat and cool the mixture slightly.
  4. Transfer the tomato mixture to a food processor and blend to a smooth puree. Or use a hand held immersion blender to puree.
  5. Taste and adjust seasoning if necessary.
  6. Can be served warm, cold or at room temperature.
  7. Refrigerate any leftovers.
