German Chocolate Upside Down Cake

Ingredients:

  • 1-1/4 cups water
  • 1/4 cup butter
  • 1 cup firmly packed brown sugar
  • 1 cup coconut
  • 1 cup miniature marshmallows
  • 1/2 cup water
  • 2-1/2 cups all purpose flour
  • 1-1/2 cups granulated sugar
  • 1/2 tsp salt
  • 1 cup sour cream
  • 1 tsp vanilla
  • 3 eggs

Directions:

  1. Preheat oven to 350.
  2. In a small saucepan heat water and butter until butter melts.
  3. Pour mixture into an ungreased rectangular cake pan.
  4. Stir in brown sugar and coconut then sprinkle marshmallows and nuts over the top.
  5. In a saucepan over low heat melt chocolate with water.
  6. Lightly spoon flour into measuring cup and level off.
  7. Combine chocolate, flour, sugar, soda, salt, sour cream, butter, vanilla and eggs.
  8. Beat with hand mixer for 3 minutes on medium speed.
  9. Carefully spoon batter over coconut marshmallow mixture.
  10. Place pan on foil or cookie sheet to guard against spillage then bake 50 minutes.
  11. Invert onto a serving platter and allow to cool then serve.
