Directions:

  1. Heat oil, add onion, garlic, salt, pepper; cook 5 to 7 minutes
  2. Add curry powder and ginger, cook 1 minute
  3. Add spinach and water, bring to a boil, reduce heat, simmer until almost all liquid has evaporated, 10-12 minutes
  4. Stir in sour cream and tofu, cook just to heat through, 3 to 5 minutes; do not boil.
