Crinkled Fudge Truffle Cookies

Ingredients:

  • 1 teasp. instant coffee granules
  • 3 eggs
  • 1 1/4 cup sugar
  • 1 teasp. vanilla
  • 6 tbsp. flour
  • 1 teasp. cinnamon
  • 1/2 teasp. baking powder
  • 1/4 teasp. salt
  • nonstick spray coating
  • pecan halves.... optional
  • powdered sugar .....optional

Directions:

  1. In a small saucepan heat and stir chocolate and shortening over very low heat until the chocolate begins to melt.
  2. Remove from the heat. add coffee.
  3. Stir until smooth....cool
  4. Beat eggs and sugar with an electric mixer on medium to high speed until light and lemon colored.... about 3 - 4 minutes
  5. Beat in the cooled chocolate mixture and vanilla
  6. On low speed beat in pecans, flour, cinnamon, baking powder, and salt until combined.
  7. Spray cookie sheets with the nonstick coating
  8. Drop teaspoons of dough 2 inches apart on the cookie sheets
  9. Place a pecan half on top of each cookie
  10. Bake at 350' F for 8 - 10 minutes or until the to is just starting to set.
  11. Do Not over bake
  12. Cool 1 - 2 minutes then transfer to a cooling rack
  13. Cool completely
  14. If desired sprinkle with powdered sugar
  15. Makes 54 to 60 cookies
